A very healthy and tasty Indian breakfast is 'upma'. It is mainly a south indian dish but we all love upma. Almost twice in a week my mom gave me 'upma' in my lunchbox. I and my friends just loved it. The fresh flavours of curry leaves and green chilies, protiens from lots of vegetables will always make your breakfast tasty and healthy. The recipe is very simple and easy. Try this in your kitchen and let me know how it turns out.


Upma / Spicy semolina / Jhal sooji

Ingredients

  • 1/2 cup of semolina / sooji.
  • 5 Tablespoons of chopped onion.
  • 3 green chilies.
  • 1/2 Teaspoon of mustard seeds.
  • Few curry leaves.
  • 1/2 cup of chopped mix veggies (carrots, potatoes, capsicum, beans, cauliflower, green peas)
  • Some raisins.
  • Salt.
  • Hot water.
  • 3 Tablespoons of white oil.

Steps

Heat oil in a pan.
Add green chilies, mustard seeds and CURRY LEAVES in hot oil.
Saute them for 30 seconds.

Then add onion, all the veggies and raisins.
Fry them for 5 minutes.

Then add the semolina. Fry it with everything for 5-6 minutes.

Add salt and again mix it for 3 minutes.

Then add a cup of hot water. Quickly mix everything very well.

Within few seconds semolina will soak all the water.
Cover the pan immediately and cook for 2 minutes.
Cooking Step: Upma / Spicy semolina / Jhal sooji
Then turn off the gas.
Let it rest for 2-3 minutes and then sprinkle some chopped coriander leaves.
